Hollandaise Sauce – Two Chicks

Take your next Zoom brunch to the next level or impress your family with this flavorful sauce.

  • 3 egg yolks
  • 10 TBS butter (salted or unsalted)
  • Lemon juice
  • Salt
  • Cayenne pepper

You will combine the ingredients in a blender or use an immersion blender if you prefer. Enjoy with some veggies or your version of eggs benedict! Racy Tracy Omelette – Squeeze In

As seen on Food Network! Impress your family when you recreate this famous omelette at home.

  • 3 pieces bacon
  • 4 eggs
  • 1 cup mushrooms, sliced
  • 1/4 cup white cooking wine
  • 6 TBS jack cheese, grated (or more, if you want!)
  • 1/2 avocado, sliced

Carrot Ginger Soup – Süp

This vegan-friendly soup’s warm flavors are comforting, and you may already have many of the ingredients on-hand.

  • Carrots
  • Vegetable stock
  • Celery
  • Yellow onion
  • Garlic
  • Ground ginger
  • Salt
  • Coconut milk
  • Bragg’s liquid aminos
  • Sriracha

Gather your ingredients, a large stockpot and a blender or immersion blender. This recipe goes together quickly, with most of the work chopping the vegetables. Who craves kale? Anyone who’s tried this delightful salad at Campo, that’s who!


  • Kale
  • 4 poached eggs

Parmesan Crumble

  • 8 TBS parmesan cheese, grated

Lemon Garlic Dressing

  • 1 1/2 ounces lemon juice
  • 1 1/2 ounces champagne vinegar
  • 4 ounces grapeseed oil
  • 4 ounces extra virgin olive oil
  • 2 TBS chopped garlic

Chuy’s Chicken Fajitas – Mari Chuy’s Mexican Kitchen

For a lighter twist on a favorite Mexican dish, try these tasty chicken fajitas.

  • Fajita seasoning (see below)
  • Olive oil
  • 8 oz boneless skinless chicken breast
  • 1/2 cup red bell peppers, sliced
  • 1/2 cup green bell peppers, sliced
  • 1/2 cup white onions, sliced
  • Corn or flour tortillas
  • Cooked pinto beans and rice

Fajita seasoning
Mix together salt, ground pepper, cumin, paprika, onion powder and garlic powder, to taste.

Toss the chicken in the fajita seasoning until well-coated. In a pan, heat the oil and cook the chicken until it browns. In a separate pan, heat the oil and cook the peppers and onion until soft. Chile Rellenos – Carlillo’s Cocina

This dish may seem complicated, but we promise it’s easier than you think and totally worth it!

Chile Rellenos

  • 4 medium poblano or Anaheim chiles
  • 1/2 pound Monterey jack cheese
  • 3 eggs

Ranchero Sauce

  • 3 medium Roma tomatoes
  • 2 tsp garlic powder
  • 1/8 tsp cumin
  • 1/4 tsp salt
  • 3 TBS chicken bouillon
  • 3 1/2 cups water
  • 1/2 cup flour

You’ll start by roasting the peppers and then cooking the egg omelet-style instead of frying. Topped with the savory ranchero sauce, this is a great dinner option. Find the complete recipe on Edible Reno Tahoe.
