Bison Sliders (yields 8 sliders)
1 lb. Ground Bison
2 oz. Caramelized Shallots
1 tsp. Karl’s Seasoning
Buttered pretzel roll, or any other slider type roll, like a Hawaiian sweet roll
8 oz. BBQ sauce with puree of chipotle peppers
16 oz. Smoked Mozzarella (Sand Hill Dairy Cheese, Nevada)
4 Shallots each thinly sliced and dredged in seasoned flour and fried until crisp
Chef Karl’s Seasoning powder
½ cup of Kosher Salt
2 tsp. Sugar
1 tsp. Ground Black Pepper
2 tsp. Garlic Powder
4 tsp. Onion Powder
4 tsp. Smoked Paprika
