Special Menus Offered at the Eldorado for Safari Club International, Available January 22-26
If you’re looking to eat on the wild side, look no further. Exotic specialty dishes are being created for memorable meals at Roxy, La Strada and The Prime Rib Grill, available January 22-26.
Guests will find five menu additions; including, pancetta wrapped rabbit loin with white truffle infused white bean soup and arugula pesto for $11; BBQ Texas jumbo quail with balsamic glazed Treviso radicchio and cipollini onions for $15; and slow rendered goose breast with warm wilted chicory salad dressed in a blood orange vinaigrette for $12. Entrée additions include a bacon wrapped venison meatloaf with wild mushrooms and charred tomato sauce for $32 and herb crusted wild boar chops with sweet potato hash and huckleberry jus for $34. The award winning bistro opens each day at 5 p.m.
Chef Ivano Centimeri is adding a twist to his northern Italian cuisine. On the appetizer menu, guests can sample antipasto consisting of potatoes croquette, wild boar salame, duck prosciutto, lardo over warm bread crostone and homemade gardiniera for $12. Pasta additions, each $20, include rabbit and roasted red pepper tortelli with rabbit braise jus, marjoram and Grana Padano; egg noodle lasagna with slow braised Sangiovese wine lamb meat sauce, thyme and cheese Bechamelle; or bigoli pasta with pheasant meat sauce and aged asiago cheese. Entrée choices are each $30 and include pan roasted Venetian style stuffed quail with winter squash risotto, Treviso radicchio and balsamic reduction; pan roasted kangaroo, tagliata style, with caramelized spring red onions and goat cheese potato gratin; and slow braised bison with cabernet wine, herbs, soft polenta and sautéed Swiss chard. La Strada is open at 5 p.m. Friday through Tuesday.
The Prime Rib Grill
Adventurous diners can enjoy Florida alligator ribs with mango barbeque sauce for $12 or an Amazon paiche fillet served with spicy pineapple salsa and coconut rice for $25.95. Included with every meal is the never-ending soup and salad bar stocked with crisp greens and an array of fresh toppings plus fresh fruits, nuts and more. The Prime Rib Grill is open at 5 p.m. Wednesday through Sunday.
